- Slice the onion in bite-size pieces and thinly slice the sausage diagonally (or cube the pork)..
- Heat some oil in a pan and scramble the egg.
- When the egg is almost cooked, add the sausages and stir fry until cooked and start caramelizing.
- Add the scallions and peas, and continue stir frying for 15-30 s.
- Add the rice and stir fry until heated through.
- Add the Shaoxing wine and continue stirring until the alcohol has evaporated.
- Add the sesame oil, stir and serve.
