Hacked Crispy Rice / Fried Rice (Cauliflower). Cauliflower "Fried Rice" which replaces rice with cauliflower is my favorite low-carb side dish when I'm craving Chinese take-out! Healthy + clean fried rice made with cauliflower, carrots, onions, garlic, eggs, sesame oil and THE BEST baked crispy tofu. This is not the first time cauliflower fried rice has shown its face around these parts, and it probably won't be the last because #obsessed.
I made this with jasmine rice and frozen stir-fry veggies and did not bake the tofu, just marinated it in the peanut sauce then pan fried it with the veggies.
This week we go on a little discovery to see if we can make Cauliflower Fried Rice tastes as good as the real fried rice..

- You need 16 oz of frozen cauliflower bagged.
- You need 1/4 cup of nonfat Greek yogurt.
- Prepare of Salt.
I had imagined so many adaptations to the recipe before I had actually made it (i.e. marinate the meat; switch up the pork for a combination of pork, chicken, and shrimp; add hot pepper sauce and/or fresh grated ginger) but I don't think there is much. Cauliflower fried rice is a healthier version of the much loved Chinese stir fry favorite. This version is made from cauliflower rice, carrots, scallions and other veggies, along with eggs, sesame oil and tamari (or coconut aminos). It's a delicious low-carb, gluten-free and paleo-friendly recipe.
Hacked Crispy Rice / Fried Rice (Cauliflower) step by step
- Microwave the cauliflower for about six minutes.
- Pulse in food processor until riced..
- Using some paper towels get some of the water out of the rice..
- Using about half of the rice, and half of the yogurt... Mix together in bowl.. And prep a pan on the stove at med high heat..
- Take the yogurt / rice mix and squish into the bottom of the hot pan with a wooden spoon or the like. It'll sizzle etc.. Depending on your kitchen skills, you can let it brown for about four minutes, then start scraping and mixing the cauliflower. It may require some arm work out, you can stir fry the rice and not let it settle as well..
- Eventually it'll all get slightly browned, remove from heat, scrape pan and enjoy. It'll take about 10 minutes or less, don't let it just sit though, unless your seriously going for the burnt crispy on the bottom..
- Repeat with the second 8oz of rice and yogurt. More Yogurt may be required, I kinda eyeballed the amount I needed..
Alternatively, cook rice in the morning, spread in a thin layer on a couple large plates, and place in the refrigerator uncovered for four hours. Serve immediately, topping each plate of fried rice with a slab of cauliflower. Garnish with sliced scallion greens, cilantro, and/or chili oil if desired. Cauliflower Fried Rice is one of the greatest inventions. It tastes and looks close to the real thing with a fraction of carbohydrates.
