- You need 1 cup of leftover rice.
- Prepare 1 of onion diced.
- Prepare of Garlic cloves-as you please.
- You need of Pineapple and its juice.
- It's of Ginger.
- It's of Soy sauce-Optional.
- You need of Vegetable oil.

- You need of Green onion for garnish.

Fried Pineapple Rice step by step
- Cut your pineapple into half and remove all the flesh. Set it aside together with the juice..
- Saute your diced onion,and garlic till translucent. Add in your salt and spices.
- Add in your preferred vegetables(peas, carrots, capsicum etc).
- Add the pineapple chunks and juice at this point..
- Let them cook for a while..
- Add your left over rice. Sprinkle some dark soy sauce and mix well..
- Let it cook for about 5 minutes..
